The house that says no on the phone tends to say yes to someone it knows.
In every city there is a set of restaurants that in high season simply will not take a booking from a stranger. It is not arrogance: the house has sixty seats and a client list fifteen years old. You get in through someone.
We hold tables at those houses and, where it makes sense, let the chef know who is coming. That changes what arrives at the table, the pace between courses and the attention of the evening. We handle the rest too: the hour that works, what to order, and what to do before and after.

What we say upfront
Not every house says yes, even with a relationship. When we cannot, we say so beforehand and offer an alternative at the same level, never below it.
